The vast majority of the starch contained is resistant to small intestine fermentation (ß-glucosidic linkage) through a special processing procedure (lactofermentation) and thus stimulates the formation of energy-rich, short-chain fatty acids. This results in a steady supply of energy without high blood sugar fluctuations. Accordingly, the insulin response is also more moderate than with conventional concentrated feeds containing cereals.
